Fourth of July is right around the corner, so I thought I would bring y’all this super easy red, white, and blue treat! (Just between us, patriotic foods are in fact tasty all year round.)
I love these popsicles for three reasons: 1. They are a healthy alternative for dessert. 2. They are ridiculously easy to make. 3. They give me nostalgia towards my childhood. (My mom used to make these all the time!)
The best part is, you can easily sub in any fruits of your choosing so you can literally use whatever is in fridge. Some of my favorite combinations are lavender + lemonade, raspberry + peach, or watermelon + kiwi. For today’s patriotic treat, I went with strawberries, blueberries, and rasberries.
Alright – let’s get to the recipe (yields 4 popsicles):
Ingredients:
- 2 cups Coconut Water
- 1 cup Strawberries
- 1/2 cup Bluberries
- 1/2 Raspberries
Directions:
- Place Fruit inside of mold, filling 2/3 of container. If you like more juice and less fruit, adjust this to your liking. I like to place the strawberries or heavier fruits in first.
- Fill popsicle molds with Coconut Water and insert sticks.
- Leave in freezer or 4-6 hours.
- Run popsicles under warm water to make it easier to take them out of their molds. Enjoy!
*If coconut water isn’t your thing, lemonade is a great alternative and just as yummy!*
