I wanted to share this super easy muffin recipe with you! Lately I have been really bad at eating a nutritious breakfast in the morning – mainly because I hateee waking up early. These muffins have been my go-to breakfast recently. These would be perfect for making on a Sunday night and then having for breakfast for the week!
- 2 Bananas
- 2 Cups of Oats
- 2 eggs
- 1 cup of almond milk
- 1/3 cup of Agave Syrup (My favorite is Central Market’s Light Agave Nectar)
- 1 tsp baking powder
- 2 tsp cinnamon
- 2 tsp vanilla
Toppings (Optional) : Blueberries, Walnuts, Chocolate Chips
- Preheat Oven to 350.
- In a medium bowl add oats and almond milk and let soak for a few minutes.
- In a separate bowl mash two bananas with a fork. Add in eggs and whisk. Then add in agave, vanilla extract, baking powder, and cinnamon.
- Combine all ingredients and pour into muffin cups until 3/4 full.
- Add on desired toppings.
- Bake for 25-30 minutes.
